Why Does Whey Protein Taste Vary?

Whey protein is a natural dairy product, not a synthetic creation. Its taste is shaped by real-world factors — and like any natural product, it will always carry a little variability.

Where It’s Sourced

We buy whey from multiple regions, including Australia, New Zealand, Ireland, and North America. Each region sources from different cattle herds, and the whey is collected as a by-product of various cheeses. For example, whey from cheddar tends to be slightly more yellow, while whey from a white cheese like mozzarella is lighter in colour. Not only is the colour impacted, but the taste profile and nutritional breakdown can shift slightly, too.

No matter what, all WPI90 (the highest standard of WPI available) will always contain at least 90g of protein per 100g. However, the remaining macros — such as carbs (including natural sugars) — along with minerals like sodium, can vary a little between suppliers and across the year. The variation isn’t huge, but it can be noticeable for some people.

Processing Differences

Whey starts out as a liquid, which is dried into powder using spray dryers. The drying process can subtly change colour and texture — longer drying can produce a darker powder, and sometimes you might even spot fine light brown flecks. That’s just extra-dry (maybe even a little “toasty”) whey.

It’s not just whey that changes from time to time. Cocoa, for instance, can be lighter or darker depending on the batch. With recent global cocoa shortages, we sometimes need to source from multiple sources. While we carefully adjust our recipes, this can mean our chocolate variants occasionally look or taste slightly different.

Even when whey comes from the same supplier, these natural factors can cause small variations between batches — before we even add flavour or sweetener.

Our Recipe Philosophy

When developing our recipes, we stick to our core values: use the absolute minimum flavouring and sweetener required, so the protein percentage stays as high as possible while still tasting good. That means our proteins aren’t going to be as sweet or rich as products that pack in 20% flavouring — we generally sit under 5%.

Every time we change a raw supplier, we revisit and tweak recipes for the best outcome while staying true to our purity goals. Most customers won’t notice a change, but some will pick up on tiny differences — and that’s part of choosing real, minimally processed whey.

  • WPI or WPC: for those chasing purity and macros first.
  • Protein Matrix+: for those who prefer a more conventional flavour, even if it means slightly lower macros.
